American Journal of Clinical Nutrition, October 2008 Dr. Harold Sandstead and his fellow researchers have published their findings on the prevalence of zinc deficiency in Mexican-American children in the latest issue of the American Journal of Clinical Nutrition. The study was conducted in Brownsville, Texas. "The Third National Health and Nutrition Examination Survey suggested some Mexican-American children are at risk of zinc deficiency. We measured the effects of zinc and micronutrients or of micronutrients alone on indexes of cell-mediated immunity and anti-inflammatory plasma proteins."
